  1. Macaron Cake Layers
  2. 2 1/2 cups almond flour
  3. 1/3 cup and 1 1/2 teaspoons of all-purpose flour
  4. 2 3/4 cups and 2 1/2 teaspoons confectioner’s sugar
  5. 6 egg whites at room temperature
  6. 1/2 cup sugar
  7. Red food colour, gel only

Raspberry Lemon Curd:Whipped Cream Frosting

  1. 1/3 cup strained the lemon juice
  2. 1/2 cup sugar
  3. 3 egg yolks
  4. Pinch of salt
  5. 1 tablespoon corn starch
  6. 2 tablespoons water
  7. 1/2 cup unsalted butter
  8. 1/2 cup crushed raspberries
  9. 1/2 teaspoon raspberry extract

Whipped Cream Frosting:

  1. 2 cups chilled heavy cream
  2. 2/3 cup sugar
  3. 1 teaspoon vanilla extract
  4. 8 ounces mascarpone cheese, softened
  5. 1 cup white melted chocolate chips
  6. 2 cups fresh raspberries


Step 1: Prepare the baking sheet

Take three baking sheets and line them with parchment paper. Trace the circles of 6-inches each on its back. At the same time prepare a big pastry bag and fit it with a simple round tip.

Step 2: Make the Batter

Mix almond all-purpose flour, almond flour, and sugar in a large size bowl. Take another bowl and whisk the egg whites at sugar at high speed for about 4-5 minutes. Beat until stiff peaks form. Add a few drops of food colour and mix it again. Add the mixture to the dry ingredients, fold and mix thoroughly until the batter achieves the ribbon stage.

Step 3: Pipe the Batter on the Baking Tray

Shift the batter to a pastry bag. Start from the center of each circle and pipe the mixture on the parchment paper. Make flat disks approximately 1 cm in height. Pipe the remaining batter to 2.5 cm Macaron disks. Gently tap the baking tray against the kitchen counter. This will release the air bubble. Keep the macarons in this condition for 1 hour, allowing them to form a thin shell outside.

Step 4: Prepare the Raspberry Lemon Curd

As the Macarons are resting, preheat the oven at 160°C or 320°F. Sidewise, prepare the raspberry lemon curd. Take a small saucepan and mix the lemon juice, sugar, egg yolks and salt in it. Add corn starch in water to make slurry and add it in the saucepan. Now heat the curd in medium flame and whisk constantly. It will take about 7 minutes to thick the mixture and start forming bubbles. Remove the curd from the stove and add butter to it. Whisk well until the butter gets melted. At last, add the crushed raspberries and extract. Transfer it to a large bowl and cover the bowl using plastic wrap. Let it cool in the refrigerator.

Step 5: Bake the Macarons

Bake the rested Macarons for about 18-20 minutes in a pre-heated oven. As they bake, take them out and let cool on the parchment paper.

Step 6: Make Whipped Cream Frosting Assemble the Cake

Take a mixing bowl, whisk together heavy cream, vanilla and sugar until soft peaks form. In another bowl, whisk mascarpone cheese and melted chocolate for a minute until they get creamy. Add the cheese mixture to the whipped cream. Whisk them again for 2 minutes. Transfer the cream to a pastry bag and fix it with a French star tip.

Step 7: Assemble the Cake

Now it’s the time to assemble the cake. Pipe dollops of cream on each Macaron layer, top them with raspberries and add a good amount of lemon curd in their center. Garnish the top with more whipped cream, raspberries and extra Macaron disks. Set your Macaron cake in the refrigerator
